Solway Smoked

Firm cheese with a definite smoky flavour. Having smoked various food stuffs in my time with varying degrees of success, I think the smoking still needs some refinement.

Quite a feisty smell to this one, and after earlier back experience with black cheese, it was with a little trepidation that I brought it to my mouth!
Nothing to worry about though, tasty soft goats cheese, plenty of goaty flavour with a sharp citrusy finish.
Seriously good cheese, definitely my favourite so far this month, it really is like a Gouda made with goats cheese, lovely firm almost rubbery texture with goaty flavour not overpowering just right. Well done Mawbray cheese company
Light and creamy Brie, no problem there.
Cathedral City Mature Cheddar
Pleasant cheddar, not too mature, even Emma liked it.
Wensleydale with cranberries
Another cheese from Shirevale, less fruit in this one than the Stilton and apricot, not the best Wensleydale, but ok for an evening snack
I will definitely be making Labneh again, so easy and very versatile. Spreadable and low in fat, with a tangy acidity.
So white Stilton with apricot. I like cheese with fruit in, this one is ok, cheese is pleasant, but the apricots are a bit too chewy and maybe too much fruit to cheese.
Pretty much no taste to this cheese, but it is great at taking on flavours and stays solid when heated, so very good in a curry or grilled.
Well this is about the easiest possible cheese to make, just yoghurt, salt and a bit of patience. Creamy flavour, spreadable and ideal to add other flavours to, so more to follow in the coming days!
