Aged Red Leicester with cracked black pepper

Another tasty cheese from Wensleydale Creamery not so much pepper as to overpower the cheese. Good on a burger, but feeling it a bit now.

Starts off a bit rubbery, but does develop a nice mild sweet nutty flavour. Melted well into cheese sauce.
Ok so it is much better than I expected! Mild mature cheddar with 30% less fat. Would be good on a healthy pizza.
Well it was ok, but not very Gouda! It made a nice salad though.
Well what would you do with Mozzarella!
This cheese looked a bit fudge like, but not to taste! The onions come through and do add some sweet notes, But the cheese has a nice tang if a little Pasty.
Like a good Red Leicester strong and crumbly and tangy. More good cheese from Wensleydale Creamery .
Slightly more crystalline than their ordinary Wensleydale and the smoke has not taken in the way I would like, it is a little acidic from the smoke being too acrid maybe, went ok with Laphroaig select.
Cheddar cheese from Wensleydale Creamery. It has a nice slightly waxy mouthfeel, good standard cheese.
Lovely buttery Cheese from Wensleydale Creamery, named after the man who saved the dairy from closure in the 1930’s. My kind of cheese, lovely.
